Description
Hong Gochu Large is a traditional Korean chili pepper and the largest variety among the Korean peppers we offer. It is milder than the variety Korean, yet still has enough heat to give dishes a pleasant, gentle kick. The name Hong Gochu literally means “red pepper” in Korean.
When the peppers are still green, they are known as put gochu (green pepper) or oi gochu (cucumber pepper). At this unripe stage, they are often stuffed, breaded, and deep-fried to make the popular Korean dish gochu twigim.
When harvested fully ripe and dried, Hong Gochu Large is ideal for making chili flakes or powder that add a warm, rich flavour to a wide range of dishes. Removing the seeds results in a very mild heat level.
Hong Gochu Large is perfect for kimchi and an excellent choice for making Korean gochugaru (dried, coarsely ground red pepper flakes) and gochujang (fermented chili paste).
